Edit: Slap me for not reading the topic through. The race of choice to go along with it would be gnome pre-WotLK, human in WotLK, reason being the human spirit racial will go pretty well with the arcane tree then.

I'd say blood elf Warlocks it a good combination (Magic addict + demonic magic seems like a good mesh).

id say Dwarf/Warrior is a very good combo

nelf / UD warrior or FEMALE draenei shaman

Troll Shaman or a human mage my preference.

I love playing paladins
and torn between female/male human & male dwarfs.
both fun to play. look good in there plate.
and pretty good starting areas.

=]

Great thing about pallying is you can be the main healer, and do quite a lot of damage at the same time in AoE instances. They changed the +healing gear to also give +damage so with Holy Shock etc you can have some fun. But time your GCDs well so you don't miss important heals. :)
